Ok so corn dogs are beyond healthy, fried corn bread coated sausages; the stereotypical beloved fairground snack: really not healthy but why oh why are they so delicious?! I love finding recipes that revamp the normally “bad stuff” into relatively healthier versions. This corn-dog muffin recipe is just that – baking instead of frying the corn bread, retains its scrummy and moorish quality whilst compromising on the grease-factor.
Preheat the oven to 180°C, fill muffin trays 1/3 with corn bread mix and stick half a sausage in the middle. Bake for about 17 mins until golden brown. These corn dog muffins are great for an indulgent breakfast, brunch, lunch or as a snack any time of the day. Yum!
